Pumpkin Lofthouse Cookies with Cinnamon Buttercream Frosting

These were so yummy…I had to take them to our co-op so I wouldn’t eat them all! Also, my daughter doesn’t even like pumpkin and she ate 3 before I gave them away, lol. 🙂




I have little ones, who love sprinkles, so of course I had to have a few of these:

Pumpkin Lofthouse Cookies with Cinnamon Buttercream Frosting


1 Cup butter, softened

1 Cup granulated  sugar

1 teaspoon baking  powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground  cinnamon

1/2 teaspoon nutmeg

1 egg

1 teaspoons vanilla

1/2  can pumpkin (15 oz can)

2 Cups all-purpose flour


1/4 cup butter

1/4 cup packed brown  sugar

1/8 cup milk

1/2 teaspoons vanilla

3 cups powdered sugar (until desired consistency)

Ground cinnamon for sprinkling

Pre heat oven to 350*. In a mixer, beat the butter for 30 seconds. Add granulated sugar, baking powder, baking soda, salt,  1/4 teaspoon cinnamon., and nutmeg. Beat until combined. Beat in the egg and vanilla. Next add the pumpkin . Mix. Add in the flour and mix with a wooden spoon.

Drop dough or use a cookie scoop and place dough 2 inches apart on ungreased baking sheet. Bake for 12 minutes. Cool on wire rack.

In small saucepan heat the butter and brown sugar until melted. Transfer to bowl and stir in milk and vanilla. Beat in the powdered sugar. Spread onto cookies. Sprinkle with cinnamon or candy sprinkles.
